Applesauce
4 Servings
8 apples, pref. Gravenstein, peeled, cored and cut into eighths
1/2 cup water
1 Tbs lemon juice
1 tsp cinnamon or apple pie spice
COMBINE APPLES AND WATER IN heavy-bottomed pan. Place over low heat and cook, stirring occasionally. When apples begin to get tender, keep simmering until apples mash easily—that's when you can tell just how sweet you want the applesauce. Add lemon juice and cook until applesauce is ready to be mashed with fork. Remove from heat and let cool awhile. Serve warm. Serve with the option of adding honey or sweetener. Allow people to add to taste. Some apples won't need any sweetener.
Optional additions: cranberries, plums, dried cherries, blueberries
Baked Apples
4 servings
4 apples (core but don't peel, try to leave about 1/2 inch of apple in the bottom so don't core all the way through)
1/2 cup rolled oats
1 tsp cinnamon
1/4 tsp nutmeg
2 Tbs brown sugar
2 Tbs raisins or dried cranberries
10 almonds, chopped coarsely
2 cups boiling water
Mix together the rolled oats, brown sugar, spices, raisins/cranberries, and chopped almonds. Spoon into apples. Put apples into baking dish and pour hot water in bottom. Bake at 350 for 30-40 minutes. When done, spoon some of the liquid over the apples and serve warm. I nice alternative to a higher fat/calorie apple crisp. Plus it's easy to make, and even kids can make it!
Fiesta Smoothie
Serves 1
Who says smoothies have to be sweet? Get 2 full servings of vegetables in this smoothie!
- 1 small tomato, quartered
3/4 cup tomato juice cocktail, chilled
2 Tbsp. minced fresh cilantro leaves
1 small garlic clove, chopped
1/4 jalapeno pepper (or to taste), chopped
1/4 tsp. ground cumin
Juice of 1/2 fresh lime (about 1 Tbsp.)
Serve with a lime wedge garnish and tabasco sauce in case you want to kick it up a notch!
